Ingredients:
2 TBL of oil
1 Onion, chopped
4 Skinless, boneless Chicken Breasts
1/2 cup of Ketchup
1/4 cup + 2 TBL of Soy Sauce
1/2 cup of Sugar
1/4 cup + 2 TBL of Lemon Juice
1/2 tsp of Black Pepper
2-3 cup of cooked Rice
1. In Large skillet, saute onion in oil until soft
2. Add chicken and cook thoroughly.
3. Remove chicken and cut up into chunks.
While chicken and onion are cooking make the sauce by combining the ketchup, soy sauce, sugar, lemon juice and black pepper. Mix all ingredients well with wire whisk.
4. Add chicken back to the saute pan with the sauce and simmer covered for another 20-25 minutes.
5. Serve over Rice
